Mushroom Soup Bolled Salt Cod Mustard Sauce, Baked Potatoes Creamed Chicken and with Peas Pineapple & Lemon Blanc Mange Salt Cod

Two lb. salt cod, egg sauce. Soak the cod in lukewarm water for 12 to 24 hours, changing the water once or twice, Wash, put it into a pan or fish kettle with warm -water, water, "or milk and water to 'boil, to cover. Bring slowly then dmmer gently "for about 1 the hour. Skim, drain. remove skin and large bones, put the fish on to a hot dish. Coat with egg sauce and serve hot. Boiled mashed potatoes may be used as a garnish or may be handed sepa- rately.

Sheep's trotters make an excel- lent and not expensive entree, they" can be served with a plain vinai- grette, after having been cooked in bouillon, or with the dressing described below, which will make them delicious.

Sheep's trotters, filleted her- rings, hard boiled eggs, celery, parsley, oil, vinegar, and mustard. Chicken livers will make the salad quite refined. Cook the trotters in a good bouillon made of half wine, half water, seasoned with salt, pepper and bouquet-garni. When cooked remove bones, cut feet in halves, lengthways put them in a salad bowl; when cold add

eggs, chopped hard-bolled with word, ot to dires season

Creamed Chicken with Peas Make a cream sauce, there should be 1) cups. Reheat in sauce 24 cups cold cooked chicken (white 'meat for formal luncheon) cut in dice and add 2/3 cup green peas, drained from liquid in tin. Serve in patty shells, on toast or on corn fritters.

Baked Rice and Raisin Pudding

Blanch cup rice by covering with 1 quart water. Bring quickly to boiling point; drain and rinse with cold water... Again drain; then add cup sultana raisins and 3 cups milk. Turn into buttered pudding dish and bake in slow oven about 3 hours. Stir 3 times during the first hour of cooking to prevent raisins settling to bottom of dish. Cover with buttered pa- | per to keep pudding from becom- ing too brown. It mixture seems at all dry addanother half or 1 full cup milk, 15 to 20 minutes before removing from oven. The grains of rice should be distinct, set in creamy mixture. Serve hot with hard sauce or sugar and cream.

SPONGE SWEETS

One large sponge cake, hollow in the centre; one glassful sherry and brandy mixed; one ounce su- 'gar; cream; two ounces blanched almonds.

Get a sponge cake specially bak- ed with a hollow centre, and let it become stale. Pour over it the mixed sherry and brandy ladling the wine over the cake until all Is absorbed, and decorate the rais- ed rim with halved. *
