moment, when we are begin- ning to feel that winter menus are getting rather dull. Oranges and lemons, now at their cheapest and beat, put health and Havour into puddings and cakes.
Choosing the Best
Tinakinned
oranges generally contain the most juice. Firm, full- bodied fruit is the best, never buy oranges that are limp. Choose lemons that are heavy in proportion to their size.
Here are economical recipes for tising oranges and lemons: Lemon Curd Filling
Bumcient for three layer cakes. To make the lemon curd, put 3oz. margarine into a jar, add 3oz. loaf sugar, and a beaten egg. Add the rind and juice of two lemons, then stand the jar la a pan of boiling water. Cook gently until the mixture illekens.
Orange Pudding-Boiled
with ittle marmalade, roll up, sea! the ends, and tle in a scalded and floured cloth. It is a good plan to place a plece of buttered paper on Ulko pudding cloth to prevent sticking.
Tle the enda with taps, fix a safety pin in the centre, boil for 21 hours, or steam for 3 hours. Turs out, and

Suet puddings are excellent for growing children. They will like this

Ingredients: lb. self-raising flour, Joz. shredded suët, a pinch of salt, Jaz, sugar, the rind and juice of one orange. Mix together the salt, rust and flour, add the sugar and the grated orange rind. Stir in the fulco and 'suficient 'cold water to form a stiff paste. Form into a roll or bail, tie in a cloth, and boll for two hours
Turn out and serve with a little hot orange marmalade poured over the top.
Baked Orange Pudding
Good cold weather sweet. Ingredients: lb, self-raising flour, 402 margarine, 1 cgg. 402, sugar, salt,
and juice rind
of two oranges. Rub the margarine into the flour until very fine."Add the grated orange rind and fulco, sur in the sugar, atid ege or a little milk. Mix well, pour into a greased baking tin, and bake in a fairly hot oven for one hour. Mark 5. This pudding is sumcient for Ave

The Children's Cake
A cut-and-come-again cake, Ingrediants: lb, self-raising flour, ilb margarine, (b), sugar, 1 egg, the rind and juice of two oranges, a ploch of salt.
Marzipan oranges and fruit slices decorate an iced party cake.
Rub the margarine into the flour and call. Add the sugar, lemon rind and juice with a little warm milk. Mix. to a light dough, then turn on to a floured board and knead well. Roll into a flat round, cut into eight, brush over with a little milk and sugar, then bake In a quick oven for fifteen to twenty minutes Regulo 7.
Split open and spread with mar- garine, or butter.
Fresh Fruit Blancmange
A nico cold supper sweet. This will have a short life, if carefully made.
Ingredients: Two heaped tablespoon- fuls of patent cornflour, threa table- spoonfuls of sugar, one pint of milk, a pinch of salt, the rind and jules of ona orange and the rind and Juice of half a lemon.
Mbt the cornflour to a smooth pasto with a little of the cold milk. Put the remainder in, a saucepan, with a pinch of salt, and bring to the boil, then pour this over the comflour and stir.
Rinse the pan in cold water, return
