THE soup must be made on Friday. 1. For one quart you will require 2lb siln of beef, meat and bone to- gether, 3-pints-of-cold-water_and_n_ teaspoonful of sult. Bring slowly to boil the boil, remove the scum, for five minutes, then add 5oz of onion, 5 oz carrot, 22oz celery, a bunch of herbs (parsley, thyme and bay-leaf), 12 pepper.corns and two cloves. Simmer gently for five hours, then strain through a hair steve and leave to get cold. Next day remove all fat and clear the soup with Alb ican gravy beef and the whites and shells of two eggs. Then on Sun- day night it will only require wan- ing up it must be served piping.hot.
