Always Bring To Table
While Still Hot
Souffles, contrary to general opinion, are made of simple every-day ingredients-eggs, sugar, fruit, milk, meat, fish, vege- tables, seasonings, Even the necessary utensils are simple mixing basin, an egg-whisk, and a soutio case,
of soufte-making you will be anxious to try the many different kinds there are to be made.
One strict rule must be adhered to, and that is, never take your souffle out of the oven until just the moment you are going to serve it then bring it to the table in the dish in which it was baked,

2 cupfuls cold, minced chicken. teaspoonful salt, 2 tablespoontuis butter, 4 eggs, 2 tablespoonfuls four. cupful

Potato Souffle Take 2 cupfuls hot, mashed potatoes, 1 tablespoonful butter. salt and pepper, grated chinese, 1 tablespoonful minced parsley, 2 egg-whites, powdered mint
Flavour the potatoes with mint, very delicately. Stir in with a | wooden spoon, parsley, salt, pep- per, and butter. Beat in milk and continue beating until mixture is perfectly smooth, then add stimmy- beaten egg-whites. Turn at once into a buttered soufte dish and bake for about ten minutes. til puffed and brown, Sprinkle with grated cheese and serve at once.

Beat the egg-whites to a stiff froth and fold gently in. Pour into the prepared sourate éase and bake in a slow oven for thirty-five minutes.

Sausage Omelet
