The cookery books do not furnish a very great variety of such re- cipes but it is possible to ring many changes upon the well- known jellies and blancmanges. For this reason it is well to have a good stock of packet jellies in the house so that you need never be at a loss if guests should turn up unexpectedly,

There are definite classes of Ices varying according to the In- gredients and method of freezing and this list gives some idea of what is meant by the names gi- yen to these classes. Water Ice: Fruit juicę sugar and water,
Sherbet:
Water ice partially stiffened with gelatine or whites of egg
Sorbet! Gracite or Punch: A half-frozen water ice to which liqueurs are frequently, added and occasionally white of egg. In a full-course dinner this type of ice is served before the roast. Frappe; A partly frozen Ice. Mousse: A light souffle type' of mixture, containing whipped. cream and white of egg. flavour- ed and frozen and seived in souffle mould
Parfaits: Cream or custard blended with jalks or whites of eggs.
Ice Cream: Cream or custard or a combination of both with fruit or other flavouring. Sundaes: Ice cream with syrup. fruit, nuts and whipped cream.
Then there are the more elabor. ate ice puddings and bombes where two or three varieties of Ice cream are frozen and mould- ed Sometimes the mould is lin- "ed with one kind of ice and an- other richer mixture blended with frult or nuts placed iriside; "the whole is then frozen and un- moulded when required. a popular for "hors d'oeuvers" and are especially tempting on hot days. They should always be served as cold "as possible and can either be entirely nonalcoho lic or favoured with a little liqu- eur according to personal taste.
PINEAPPLE FLAN
If you are fond of pastry, have a fan (or open pastry tart) made in the morning and for dinner fill it with pineapple cut in chunks, thickening the juice with a little gelatine so as to form a jelly. Blobs of whipped- cream (or white of egg) and cry-.. stallised cherries turn this into a very special dinner sweet.
Marrow Toast
Take out the marrow from a large beef bone which has been boiled, and when it is cold put it into a saucepan with a little well-salted water and boil it for just a minute.
Now spread it on squares of hot buttered toast, breaking it with a fork, and bake it in the oven for five minutes, when the marrow strould be melted.
Season with salt and cayenne pepper, and sprinkle if you like with chopped parsley, chives and- a squeeze of lemon juice. It must be very hot when served.

Creamy smooth and delicious
-in favour, frozen desserts offer a wealth of variety. Prepare them In the mechanical refrigerator or
in freezer and enjoy their temp- ting and satisfying goodness there first warm days. If you
use an electrical refrigerator you will have to take special care to keep the. mixture smooth and velvety, as mixtares frozen in granular this way may become unless certain precautions are taken. Junket tablets and pow ders, gelatine and syrups are an aid in creating a perfect texture.
Try some of these recipes for a real culinary thrill.
MALT-COCOA ICE CREAM
1 tsp. gelatine
1 cup cold water
cup hot water
i cup condensed milk
cüp malt cocoa
2 tbsp. sugar
1 tsp. vanilla
pint heavy cream
cup ground walnuts
Add the gelatine to the cold water and let stand for 5 minutes. Add the hot water and stir till dissolved. Add the condensed milk sugar and vanilla. Pour on the malt-cocoa and beat well. Add the vanilla and nuts. Pour into tray of mechanical refrige- rator. Let stand for at least 12 hours. 24 hours is better.
BANANA ICE CREAM cup evaporated milk
1 tsp. gelatine
2 tsp. cold water
13 cups banana pulp
A cup confectioner's sugar
1 cup maraschino cherries
2 tsp. lemon juice
1 egg white
pulp, sugar,
Scald evaporated milk over hot water. Soak gelatine in cold wa- ter 5 minutes and dissolve in scalded milk, Chill combine. banana
chopped cherries and 1 teapoons lemon juice. Chill. Add 1 teaspoon juice to chilled, milk and whip. Whip egg white. Fold whipped egg white and milk into the ban- nana mixture. Pour into retrige- rator pan
Remove and freeze. from the refrigerator orce dur- ing the freezing and scrape the mixture frim the bottom and sides of the pan, beat and re- turn or freezing.
VANILLA ICE CREAM 2 cups milk
1 tbsp. corn starch
2 egg yolks
cup sugar
cup corn syrup tap. salt
1 cup rich cream
* egg whites
1 tsp. vanilla

Make a paste of a little of the milk and the cornstarch, then add to the rest of milk, which has been scalded, and cook till thickened.
stirring constantly. Beat the egg yolks, add the sugar, corn syrup and salt and salt and mix well. Add the hot milk gradually to the egg, mix- ture, then return to the top of the double boller and cook like custard till thickened. Add vanilla.
