PINEAPPLE BETTY
This is a simple dessert that is sure to please.
Two cups Anely chopped or shredded pineapple, 2 tablespoons butter, 3 cups soft bread crumbs,
cup water or pineapple, 2 table-" spoons butter, 3 cups soft bread- crumbs, cup water or pineapple juice.
Melt butter in frying pan, add bread crumbs and brown lightly. Put a layer of crumbs in & but- tered baking dish, cover, with a layer of pineapple and sprinkle very sparingly with cinnamon. Continue layer for layer of pineapple and crumbs until all are used, making the top layer of crumbs. Pour liquid over the pudding and dot with bits of butter.
Cover baking dish and bake forty-five minutes in B moderate over and then remove cover to brown top. Serve warn with hard sauce or cold with
cream.

A QUICK WAY TO MAKE COCONUT ICE

SAVOURY EGG RAMEKINS
For six people allow six eggs, one and a half ounces butter, one gül cream, five teaspoonfuls chives chopped parsley, and mixed, for tomatoes. You will also need breadcrumbs, cayenne, salt, paprika and a bay leat,
Butter six small ramekin dishes. Mix together the breadcrumbs, parsley and chives, adding salt and cayenne to taste. Line the ramekins with this mixture, break an egg into each, and add a small plece of bay leaf, a little butter, a dash of cream, and, two slices of tomato arranged one each side of the egg. Cover with bread- crumbs, sprinkle with paprika, and cook in a hot even until the eggs are just set. Sprinkle with with chopped parsley, and serve at once.

It should be remembered that dried fruit must be cooked care- fruit fully and properly. The modern version is a far cry from the original "two slices of bread, with a thin layer of filling between," because the most al- luring of sandwiches uses but one slice of bread and the filling is anything but "thin."
