One small teacupful of rice, 11 pints milk (fresh) one tablespoon shredded suet, pinch of salt, fla- vouring of lemon peel, sugar to taste, 2 ozs. seedless raisins. Mix all together and add milk. Put in a ple-dish and bake in a slow. oven for 1 hours.

Shell the hard-boiled eggs and cut them in halves. Beat the raw egg. dip the hard-boiled halves into this, then coat them With breadcrumbs." Repeat the two coatings before putting the eggs into a pan containing boil- Ing frying-fat. Cook until gold en brown, take up, and drain thoroughly. Pile the eggs on a hot dish, garnish, with fried parsley and a light sprinkling of cayenne, and serve with hot tomato sauce.
TO FRY PARSLEY Wash and dry a large bunch of fresh parsley, drop it into very hot frying fat, and cook till crisp. Drain before using.
SAVOURY EGG RAMEKINS
For six people allow six eggs, one and a halt ounces butter, one gill cream, five teaspoonful chopped parsley and chives mix, ed, four tomatoes. You will also need breadcrumbs, cayenne, salt, paprika, and a bay leaf.
Butter, sit small ramekin dishes. Mix together the bread- crumbs, parsley and chives, add- ing salt and cayenne to taste. Line the ramekins with this mix- ture, break an egg into each, and, add'd small piece of bay leaf, a little butler, a dash of cream, and two slices of tomato arrang- red one each side of the egg. Cover with breadcrumbs, sprin kle with paprika, and cook in s hot oven until the exgs are just 'set, Sprinkle with chopped
parsley. and serve at once.
