Chicken Chop Suey

1 young chicken

kilo pork

1 tablespoon sugar

2 cloves garlic

1 cup green onions

1 cup mushrooms

1 cup celery

1 green pepper

I tablespoon flour

1 teaspoon ginger

2 teaspoons soy

1 cup water

3 tablespoons Crisco.

Cut the chicken., pork. garlic, enions. mushrooms, celery and Heat green. pepper into strips. the Crisco in a saucepan, add pork, ginger and garlic and cook until the pork, is..nicely browned. Then add the sugar, four, soy and the other ingredients, the chicken last. Stir in one cup of water and cook gently until chicken der. Serve hot.

Silce any bread (stale) prefer- ably and toast in the usual way' allowing as many slices as you

need. Put halí a pound of butter Into a double boiler and allow to melt stir in 1 teacupful, powder- ed sugar. Spread this on the hot toast and sprinkle generously with cinnamon. Excellent served at breakfast or for an afternoon tea.

Apple Duffle

"A fresh way of treating apples.

Stew six apples in a little water... with two teaspoonfuls of sugar. Put into a ple-dish.

Rub one tablespoonful of butter into four tablespoonfuls of flour. Add two tablespoonfuls of sugar. Then one egg and enough milk to mix to the consistency of thick cream. Just before pouring this over the apples, stir, in one tea- spoonful of baking powder. Brown in a fairly quick oven for half an hour. Serve hot.

Some Hints for the Home Cook

Then it oc- curred to me that possibly he had omitted to dry the slices well be- fore dropping them into the pan. and this proved to be the ex- planation. The moisture from the been cut vegetable had just enough to prevent crispness. Some chets advocate slipping the potato slices into the oven for a few minutes before trying in or- But der to ensure evaporation. unless timed to a second, this method is apt to bring about a certain lack of favour, some es- sential quality having been dried out. It is better to dry with a soft, clean cloth.

Fish should be thoroughly pat- ted dry before is grilled or fri- ed. And further care in eliminat- ing moisture is implied in the four-dredging, which is a factor. in bringing about the golden- brown hue. Neither fish nor po- tatoes put into boiling fat, will splutter up at the cook. if they are dried beforehand. By follow- ing this rule. he will not only avoid risk of fat-scalding, but will have less work to do tri clean- ing his cooker.

If you have a garden in which to swing a wire salad-basket, you will dry your lettuce and endive in this vigorous fashion before you so much as shew it the salad- bowl. But if no such amenity is yours. then you must keep handy a specially absorbent salad cloth to dab on each leaf before you break it up with your fingers.
