One of the best of store sauces, and a very simple one to make. is mushroom ketchup.
Use large mushrooms in good condition and break them into an earthenware pan.
Strew them liberally with salt (ib. to a gallon of mushrooms) and stir them well each day for three days.

It is by no means easy to make suggestions for confirmed break- fast-eaters, for there must be little that they do not know about' that matutinal 'rite so dear to them. Cucumber ketchup, which is a good addition to white sauces for serving with white meats, is made by extracting the juice as in the other ketchups and bolling it up with an ounce of bruised ginger, the same quantity of white pep percorns, and a dessertspoonful if pounded.mace.
