A Fish Recipe
These six recipes all demand a
white wine sauce. The fillets in each casa have been poached. (1) "Arrange the fillets on a bed of mush- rooms puree, and cover thein with
the sauce flavoured with anion. (2) Garnish the fillets with cooked button onions, and small whole mushrooms, and mask with the plain sauce. (3) Mas the Allste with the sauce and garnish them with tinned asparagus tips tossed in butter. (4) Roll the fillets bofore poaching them, and put each one in a scooped out tomato half which has been cooked in the oven and half filled with minced onion stewed in butter. (5) Mask the with the sauce, to which you have added fine chopped herbs and roughly chopped tomato. (6) Arrange the. llets" on a bed of stewed strips of lettuce, and mask them with the sauce favoured with paprika. All these recipes will apply to any other fish."

Not That Kind Of A Job
"
"I want a man to do odd jobs about the house, run errands, one who never answers back and is
always ready to do my bidding," explained a lady to an applicant, for a post in the household.
You're looking for a husband, ma'am, not a servant!" said the seeker for work.

THE FRAGRANT ROOM
Alternatives To Pot Pourri
Some rooms have a fragrance particularly their own, though possibly there are no flowers to be seen. Whence does the frag- rance come?
SCENTED CUSHIONS
You may be able to trace the scent to the cushions. When these were made, perhaps handful of dried and crushed lavender was mixed with the feathers, and this still continues to emit the subtlest and most delicate reminder of its presence. Into
another pillow, maybe, a tiny bag of powdered--orris-root has been slipped; and this also gives out a pleasant aroma. It is possible that some dried rose- mingled with petals have been
it, but I think the fragrance is more delightful without this ad-
dition.

Some of us are not very fond
ture of odours as erring upon the dickly side." A good-plan, then, is, to' give--fragrance to the room by way of a wad of scented cot- ton wool, Atted into a small pot- pourri jar with A perforated cover. This can be saturated from time to time either with essence of scented geranium-leaf or with oil of lavender, both of which are sutaciently pungent to be refreshing. Moreover, they do not become sickly or stale

If you make a practice of keep- ing sachet powders in the chest in which you store afternoon tea cloths, d'oyleys, lace chair-backs and so on, a certain' aroma will cling to these things, and help to enhance the general sweetness of your room.
HAM DUMPLINGS This dish is not as heavy as it sounds, and is useful at a time of year when cold ham does not keep as long as we should like it to...
Miace up half a pound of lean ham and mix it with an ounce and a half of flour, a couple of ounces of batter, talicspoonful of chopped
Cut up the pineapple finely into small pieces, or shred it, taking care not to lose any of the Juice. For this reason it is ad- visable to cut it up on a china plate. Put into a saucepan, add the lime juice, then shred the skins of the limes as finely as possible. Add pint of water to the pineapple and simmer gently until the fruit is tender.
