Cut cold roast veni in small strips about 2 cups full. Prepars
1 cups sauce veloute, add meat, bring to bolling point and serve in a potato border.
Veloute Sauce
Melt 2 tablespoons butter, add 2 tablespoons flour, stir until frothy, then add slowly while stirring constantly. 1 cup chicken broth or white stock, beat until smooth and glossy. Season with salt, pepper and a pinch of nutmeg.

Custard-
One fourth, cup sugar. One tablespoon cornstarch.
Two egg yolks.
One cup scalded milk Dash salt

One-fourth teaspoon vanilla...
Mix and sift the dry ingredients together, pour over scalded milk stirring briskly. Cook until slightly thickened Add to egg yolks which have been beaten. Cool before pouring into shells.

One-half teaspoon lemon juice, Soak dried apricots in water for an hour and cook slowly until soft. Put through a coarse sieve or ricer. stár in sugar and lemon juice. Beat egg whites until stiff, add the apricot mixture and combined. continue beating until mixture will hold shape. Sprend aver custard which has been poured into individual custard shells.
Serve call.
