A l'Andalouse

A SPANISH fashion such as this surely demands pimentoes, and these we find at once in the garnish, for large jointa and chicken,

This consists of grilled halves. of pimentoes stuffed with rice à la grecque (that is, a pilaff cooked with pieces of sausage, with the addition of peas and dice of pi- mento) of slices of aubergines toased in olive oil and garnished with parsley-sprinkled pieces of roughly chopped tomato also cook

ed in oil.

The cooking in oil is, of course, a definite feature of this fashion.

Sauce Andalouse is a cold one, And consists simply of a mayon. tinise since favoured with tomato purde and with dice of pimentoes added to it.

A clear soup of this name is a consommé favoured with tomato, and garnished with dice of royale and tomato, rice and very thin

trips of ham.

APPLIED TO EGGS

The thick soup is a relouté, flavoured with onion and tomato, garnished with rice, little pieces of tomato and thin strips of pimento, and finished with cream.

Eggs can be served à l'andalouse, friel, cold, or in the form of an omelette. The first are fried in oil like a frittor, and alternated on the dish with slices of fried auber gines, with a tomato sauce served

Large joints are served with the garnish already described. A half- glaze sauce flavoured with tomato should accompany them.

An Andalusian salad is com- posed of quarters of tomatoes, licuue strips of pimento, plain cooked rice, chopped onions and parsley, and a suspicion of garlic. Aubergines are the only vegetable cooked & l'ondalone. They are scooped out, stuffed with roughly chopped tomatoes, pimento dice, and pieces of hain all cooked in batter, and themselves then cook- ed in the oven. A half-glare sauce. with tomato should also be served with theza.
