Celery Cream Soup

REQUIRED:

Ono head

A celery, one oz butter, two ezs. Bour, one pint of white stock, one pint of milk.

Method: Clean celery and cut into two-inch pieces, using stalks nearly up to the leaves, simmer slowly in white stock with added salt and pepper for 30 minutes. Melt butter in saucepan and stir in the flour, then very slowly add milk. Sur until four has thickened smooth- 13.
