Serve mixed orange and grapefruit pulp in grapefruit shells, sweeten to taste and sprinkle with powdered mint.

Parboil skinned lambs' kidneys, wrap cach in thin piece of bacon, fasten with cherry stick and bake in moderate over (Regulo Mark 5) for 10 to 15 minutes. Forcemcat bails can be rotted in flour and baked or fried. Scraps of puf pastry and the end of packet of pre- pared Welsh rarebit can be used for savoury. Put layer of rarebit between smail pieces of pastry and bake in lint oven for 10 minutes (Regulo Mark 8).

Thunder in the Air

URING warm and thundery wenther, milk will keep fresh longer if it is scalded, but if, in spite of this precaution, you, And it has turned, save it and ninke these excellent scones.

Mix together Goz, four, loz sugar, 2 tablespoonfuls sultanas, one table. spoonful currants, half a teaspoonful of cream of tartar, pinch of salt.

Rub in 2oz. butter and add the yolk of an egg and sumelent sour milk to forn a smooth, stiff paste.

Fold in the white of the egg, then fl some small gressed patty tina with the mixture. Brush over with sugar and milk, and bake in a quick oven.

Split open and spread with butter. Cream Cheese

Another way to use tip sour milk is to turn it into cheese.

Stand in a warm place to thicken, then stir in a teaspoonful of salt to each pint of milk.

The the cream in a muslin bag and hang it up in the shade to drain. This will take about two daya.

When quite drained. tighten the bag, and press it between two plates to squeeze out all the remaining mols- ture. The cheese is then ready for Serve with buttered rolls and

One of the nicest things to make with sour milk is curdle cake. Here is the recipe.

Mix together 1b. self-raising flour and 4oz. sugar. Make a well in the centra and pour in half-pint sour milk and a few drops of vaalila.

Light Biscuits

Biscuits to accompany that after- Mix together 4oz. noon cup of tea. self-raising flour, teaspoonful bl-car- bonate of soda, a pinch of salt, and n tablespoonful of currants.

Add suficient sour milk to form a stiff dough, roll out and cut into small rounds with an egg cup.

Placo on a greased tin and bake in n fairy hot oven for ten minuter. When cold sprinkle with caster sugar and store in an airtight tin.

Beauty Hint
