The manufacture oltinned goods in Hong kong and parts of the neighbouring province of Kwangtung hai acquired considerable dimensions, The product of the factories are consumed focally and exported to other paris of China and to countries where there in 'a Chinese population.

Samohn or Chinesa spirit is made from rice, the fermenting material being a substance composed of rice, bean flour, red earth and leaves which are stated to bá cassia loaves. Various well-known beverages are prрued by flavouring the spirit with plums, oranges and other froits.

The retail prics of the ordinary Obloese spirit is under 7 cents a catty. The most ex. sponsive beverage distilled locally and com. posed of roses, ordinary spirits and sugar coste 40 cent a catty, Modicated spirits have a considerable sula among the Chinese. The #pirit' principally used is oua distilled from millet and obtained from the North of China. To this spirit are added various drugs and the mixture is used as a tonic.

There are seven Chinens distillorier exclusivo i of the village distilleries in the New Territories which have an annual output of soms 100,000 gallons, about one-tenth of which is exported,
