Skilfully favoured sauces will go a long way towards ensuring the success of a simple dish.
The basis of a large number of sauces is white sauce. From this foundation can be" made such varieties as anchovy, caper, cheese, onion and parsley.

FISH EN CASSEROLE

Melt a little butter in a pan, and gradually add a tablespoonful of four then pint milk and water. Stir until it thickens, stir in two tablespoonfuls of anchovy essence, a little chopped parsley and a few drops of lemon juice.
Put into a casserole about 1ib. and cooked cod. with the bones skin removed, and naked. Add Sepper and salt, put on the lid and cook in a moderate oven for 1 hour. Pour over the sauce and serve fish in the casserole. Mashed potatoes are good with this.
CHEESE AND HAM TOAST
