Savoury Cucumber Recipes

STAPLES SURPRISES

Many people who say "I can't eat cucumber" will find it quite a digestible vegetable it cooked in one of these savoury ways.

An extra thick 'cucumber is most appetising if stuffed and baked...

Boil it for fifteen minutes, then remove the peel. slice in half lengthwise and scoop out the seeds.

Fill the hollow with a forcemeat made by mixing together two tablespoons, each of shredded suet and breadcrumbs, two teasps. of chopped parsley, and 1 teasp, of chopped onion. Season then bind with beaten egg.

Tie the cucumber together, brush over with the remainder of the beaten egg. sprinkle with bread-" crumbs and place in a baking tin. Dot with dripping, and bake in a moderate oven for 15 minutes. Mark. 4.

Baste frequently with the gravy, and when nicely place on a hot dish. Remove string and serve with thick brown gravy

and potatoes.

Tasty Pie

Cucumber and cheese 'ple is sure to please the family.

To make this, slice a cucumber and two small onions and simmer In milk and water for twenty minutes.

Melt a nut of margarine in a pan, stir in a dessertspoonful of cornflour. a pinch of salt and pepper, two tablespoonfuls of grat- ed cheese and i pint milk. Sim- mier and stir until the mixture thickens

Sprinkle a pie dish with grated cheese, then with breadcrumbs. add the cucumber and onion and pour over the white sauce.

Sprinkle with more breadcrumbs and cheese and, lastly, a little chopped parsley, Bake in moderate oven for twenty minutes.

Strain off the water, put cucum- ber and lettuce into a pan with a nut of margarine, stir for a few minutes. then add half a pint of hot stock.

Hot Sauce

Lamb cutlets are extra nice if served with hot cucumber sauce.

Peel a cucumber, cut it up and put into 1 saucepan with a little vinegar. cayenne pepper, salt. a small chopped onion" and a few "celery seeds.
