Sweet Omelet
Another good method, which is sweet particularly suitable for omelets, is to beat the yolks and whites of the eggs separately. The yolks should be beaten with dessert- spoonful or more of sugar, and a few drops of vanilla essence or other favouring added. The whites should be whisked to a stiff froth, and carefully folded into the yolk care being taken, not to let the whites fall in the process.
