MAKING JELLIES AND CREAMS

Those luscious-looking clear jellles, which give so much joy to children and sometimes to adults, have for the majority of people ong draw-back-their food value is negligible. The only people who can with advantage consume food, which appeases the appetite, but is lacking nourishing qualities, are those suffering front obesity. But, although clear jel- lies alone lack the sustenance which is necessary for children and adults of normal size, various valuable foodstuffs, such as milk, cream, eggs, cornflour and 'fruit, can be incorporated with them. producing very attractive summer, puddings.

A packet jelly, jelly crystals, or evan gelatine and some fruit juice from an opened tin of fruit, can be made quickly into attractive and appetising dishes with a little ingenuity in varying the colour and flavour.

few points which should be remember- ed in order to obtain satisfactory results. For instance. under nor- mat conditions I oz of gelatine is sufficient to stiffen a pint of liquid, but should a jelly be wanted quickly on a very hot day, when no cool larder is available. the quantity of gelatine should be increased slightly or the quantity somewhat lessened. of liquid similarly, in using packet jeles less boiling water should be added. It may not have occurred to some readers that a means of reducing the time required for setting, a packet. jelly is to add half the quantity of bailing liquid men- tioned, which is sufficient to melt the jelly or crystals, and to add the remainder cold. This liquid over from stewed fruit, the syrup may be water, spare juices left from tinned fruit, or milk

1 gill white vinegar,

3 teaspoonfuls mustard,

2 dessertspoonfuls salad oil,

2 dessertspoonfuls caster sugar. Whisk up the egg, then pour the milk on to it. Put the mustard- and conflour into a basin and mix them to a paste with the oil, add the sugar and vinegar, stirring the latter in gradually.

PORK CHOPS WITH FRIED

APPLESA

Season chaps with salt and pepper and a little powdered sage. Fry about 30 minutes or until they are cooked Put them on a hot dish pour off part of the gravy into another pan to make a gravy to serve with them. Then try apples, which should be sliced about 2/3 of an inch thick cutting them around the apples so, that the core is in the centre of each plece, then cut out the core. When browned on one side and partly: cooked, turn them care fully and finish cooking. Dish around the chops.

BANANA PUDDING

oz. self- 4 oz. margarine, 6 raising flour, grated rind of 1 lemon 2 bananas, apricot jam, a little milk. Grease a pudding. basin, put a spoonful or more. of apricot jam in the base of it. Cream the fat and sugar then gradually stir in the sifted four and finely grated lemon rind, - moistening them with the well- whisked eggs and a little. milk as required. Peel and slice the bananas and mix them into the pudding. Turn the mixture into. the prepared basin aid cover it securely with a well-buttered paper. Steam the pudding for from 11 to 2 hours. Then turn it out and serve it with Jam sauce.
