INGREDIENTS.-1 oz. butter, 1 good oz. flour, pint milk, half a medium size tin Nestle's Pure Thick Cream, 4 ozs, cooked fish, salt, pepper, mace, a little bacon, batter. METHOD. Melt the butter in a pan, add flour, then the milk gradually, bring to a boil. Add the fish (broken); salt, pepper, mace and cream. Leave to cool. Place a little of the mixture on a strip of bacon, roll it up, dip into batter, and fry in hot fat. Drain, dish up, and garnish. INGREDIENTS (for the Batter).-2 oz. flour, salt
and baking powder, egg, very little milk.

Not more than forty pigs in any vessel shall be placed in one pen. Three square feet shall bo allowed per head, two pige each under 80 lb. live weight to count as one, three pigs each under 50 I live weight to count, as one. When carried in crates, separate crate shall be assigned to ench pig. Crates shall bo ar- ranged in rows and, if stacked, there shall be two layers or tiers. only. Row, if not single, shall be two deep only. Crates shall be so arranged that all the pigs' heads in a single row face the same way, and in a double row face outwards. On the side or sides of a row on which the pigs'' heads face, an alley-way shall be. left, eighteen inches wide, to allow food and water to be given. All the crates in a row which is not stacked shall be securely lastened together. In the case of a stacked row there shall be pairs of strong upright posts, which may be of a detachable type, of a height not less than the top of the upper layer or tier, securely fastened to the deck and supporting the row or stack. Such pairs of posts shall be fixed at each end of the stack and at intervals of not more than five crates in the stack's length.
