STANDARDIZED CHEESE.

By the use of pastourized milk for Cheddar cheese, two Wisconsin experi- menters J. L. Sammis and A. T. Bruha --claim to have overcome the uncertainties of the manufacture. The processes have varied from day to day, with correspond- ing variation in the product itself, as a result of the great differences in the kind and quantity of bacteria in the milk at tlac ontset, but hting to 160-165 degrees kills 99 per cent, of the bacteria. After next increasing the eidity of the milk to 25 per cent, with hydrochloric acid, a púre culture of lactic neid bacteria is added. The final opera- tions can be carried out by regular time schedule. The product is stated to be not} only more uniform quality than that by the ordinary method, bat the average

AN AFRICAN VEGETABLE BUTTER. Dika butter, to which attention is called by a consular note, is an orange- yellow edible grease of the Irvingia gabo- niensis, a tree of the west coast of Africa. It is similar to cocoa butter and in some respects better; its melting point is 108 degrees F., that of cocoa butter boing" 79 degrees; and it is very stable, keeping very long time without becoming raneid. A NEW ACETYLENE CARRIER.

Acetylene gas under pressure is safe for automobile lamps and other purposes and in solution, and it is usually com- pressed in acetone. A new suggestion is that acetaldehyde, from the oxidation of grain alcohol, is a cheaper and somewhat better solvent. At 70 degrees F. and a 'pressure of 25 pounds, 2 ounces have - dissolved-48%, ounces of acetylene; and for welding the heat of the solution is scarce ly less than that of pure acetylene.
