A few years ago, before parallin became well known and widely used, there were two kinds of oil in common use. The one wis a clear kind of vegetable vil, Hot by crushing, from the sords of the mustard plant-a plant which in the springtime of Bower covers much of the country with a golden glory and the other a coarser l got from the famous Tang tres, the fruit of which looks like a common apple, and the skin of which fruit, until it ripens, is laden with a thick oil, which quickly darkons on exposure to the air, When the fruit ripons the skit dries up, a d the oil is found in the large kernels almost the size of peach stops. The mustard oil is the sacred oil of worship, and night by night if a clear flame shines on the faces of the gods in multitudes of temples and myriads of homAR, No one thought of barn. ing the courser Tang oil, with its heavy smoko, in the lamps of divinity. In preparing their food no animal fat is ever used, and to them the sacred mustard oil is a great boon and a no- erssity.
The coarser oil of the Tang treo has its many. naos, and from ranking as imporer and cheaper than the sacred oil. It has in the last two or three years rapidly sprung to the front, and has long outdistanced its proud rival which formel the Light of Hades and played on the faces of the gods, and was daily and nightly used in chasing away the gloom of millions of opium laves. The change has been brought about by the cessation of mach of the oplum-smoking and by the large export trade which has sprung up in the seeds of the Tang tree, the oil from these being grad as the basis of many of tha best varnishes.
The Tang oil is never need in the prepara. tion of food. There is a story told of a great catastrophe which this oil helped to bring about the ranks of one of the armies of the famoOHIS Taiping rebols. In the winter to the oil solidifies, and becomes white as the fat of pork If there is anything which is dear to the hearts of nearly all Chinese, it is "pork fat." The many savoury dishes which the Celestial is a past master in the-art of preparing would be failures but for the tuck-plard 'pork fat," Is the later years of the Taiping rebellion, which so nearly overthrew the Mauchu dynasty ops of the armies tokkod went, over- running much of the fair land of China's border provinces, and striking terror into the hearts of multitudos liarover these forces of brave, up scrupulous men appeared. They devastated the fair valleys of North East Yunnan liko a lack of locusts. Coming into the district where the Tung
