The ripening of cheese is not yet nudorstood. much as it has been studied. Ono authority supposes that in hard cheeses the effect is dus to outside bacteria that make their way inwand
from the surface; but another student of th subject believes the cause to be lactic bicteria that are present in the milk and are distributed uniformly through the cheese. Rocout evidenco in favour of the latter view is the finding that ripening occurs with alsolute uniformity through the whole cheese.
A nural apparatus for inspecting boiler-tubes is to invention of M. Vinsonno It consists of an extension tube, at one end of which is an incandescent electric lamp. with an angular plave reflector, while at the other end is a similar refoc or to receive the rays and an eye piece magnifying the image. In the tests made, this apparatus has shows serious inter
mal defects in boiler tubes that outside seemed quite sound.
