Use five pounds veal shanks. Have the bones sawed into two-inch lengths. Place in a deep kettle. add cold water to cover the meat and bones approximately five or, six cups. Cover and place over a low fire to simmer until the meat 1× render. Remove the meat and cool. Allow the stock to cook down to 112 cups. Cut all long fibres of meat crosswise into one-half lengths and break apart into small sections. Arrange the cut meat loosely in the ran. Strain the stock and season highly with salt, pepper, celery salt and paprika. Press meat down with the back of a spoon until the top is flat and smooth. Set away to congeal possible, allow loaf ic cool in a refrigerator so that the stock will become stiff enough to slice easily and hold the meat to- gether. Chopped pimiento or green pepper may be added to the loaf before cooling.
