Now With Rice
DASH of lemon juice can be as useful all round as a pinch of salt There are few dishes that do not benefit by a little lemon, and, although that little is often not enough to flavour the dish by itself, it helps more 'than you might imagine to bring out the parti- rcular favour of the dish. If it is intended to be used as sole flavouring, it is a very delicious one; and in larger quantities it is extremely health-giving. It has such uses, too, as wḥiten- . ing fish and white vegetables like artichokes, and it counter- acts the effect of loo much fat. Here are some ways of using lemons.
2 lemons
Lemon Curd
87% enstor sugar
20 bitter
2 eggs
Put the butter in a saucepan, and when melted add the grated lemon rind and the juice, also the Mugar, and when it is dissolved. and mixed, add the beaten eggs. Stir over the fire till it thickens, cool and not.. Seal tightly..
Meringue Biscuits
5 oz. plain flour
4 oz. ground rice
4 oz. margarine
1 erk
3 oz. castor kugar 1/lemon
Mix the four and ground rice and rub in the margarine. Mix in the sugar and grated lemon rind and lemon juice; mix with the beaten egg yolk and knead into a soft dough. Roll out thinly, cut into fance shapes, and bake in a moderate oven.. When just cooked' have the egg beaten stiffly with a teaspoonful of castor sugar, brush this over the biscuits and put them back in the oven for a few minutes to set the meringue.

Lemon Sponge
1 oz. caster sugar
oz. leaf gelatine
pint, water,
1 lemon
1 egg white
Hent the water, sugar, gelatine and thinly cut lemon rind together, stir until the gelatine is dissolved, then strain on to the white of egg and lemon juice previously mixed in a large basin. Whisk all to- gether until still, then pile on a dish and, if liked, colour the last portion with carmine, and place it on top. If preferred, the sponge may be set in a mould rinsed with cold water and turned out when. quite firm.
A plain fresh lemon-milk jelly made from leaf gelatine is de. licious addition to a stewed or canned fruit sweet, It tastes well with rhubarb too.
We talked about rice before and decided that it should be one of the main items of the Hong Kong ' diet. For that we should be grate- ful, for everybody likes rice when it is well, cooked. 4 tablespoons ricc
1 cups boiling water
1 teaspoon salt
1 cup hot milk
2 egg yolks

Pat rice and water in upper part of double boiler; place directly over heat and let come to the boil. Add hot milk and salt, place over water and allow to steam until rice is tender, but not soft. Remove from fire, add well-beaten egg yolks, butter, paprika, pepper, Worcester- shire and chives, inely minced. Fold in stiffly beaten egg whites, and turn into gresied casserole place in moderate oven (350 deg, F.) until puffed and brown:
