Fruit salads are becoming in- ereasingly popular. At one time
salads were made only of plants such as mustard and cress, lettuce, endive, etc. but now all kinda of fruit, cheese and nuts are used.
Fruit salads can be the most attractive and refreshing of all 80- lada. To appeal to the eye and ap-i petite they must be made from thoroughly chilled and not over ripe fruits. Fresh, tinned and dried fruits are all suitable for salads.
