EDINBURGH, March 4.
DIST OF THE WORKING CLASSES. The disting of the Scottish working, classes her lately attracted considerable attention, a change having taken place which is altogether for the worse. "A vary interesting roport on this subject has just been published by Mins Dorothy Lindsay, B.Sc., & Carnegie research fellow, which emphasis overal important points. Sixty households in the city of Glasgow were chosen for investigation, all of the typical working class, the family earnings varying from under 20s, a wook to 48.. and they were kept under observation for a suulent length of time to enable an approximately accuratis estimate of their expendituro upon food and the nature of their diet to be made. As a standard of comparison, the usual forinula was accept ed that for a moderate day's work 8,000 calories of energy should be supplied in the daily food of a working man; and the result of the investigations showed that few of the familias obtained a suficiency of nourishmeat. Of the finilios whose wookly income was over 20%., about 28 per cont. had a diet of less than 2,000 calories, and of the families whose ina comes were under 204, no love than 62 per cent, failed to reach this minimum standard. As was to be expected, it was found that some house-wives were able to make a shilling go much further than i others. Bread, sugar, butter, tea, and beef occurred in all the diets. Of meats other than beef, bacon, mince, and sau. sages decurred in 41 dictaries. Fish was Intle used, and the principal, vegetable fels were bread and potatoes. The in. vestigator 'was struck by the lack of varhely in the diets, nad eslls attention to the neglect of catmont, peas, and beshs. all of which are cheaper then the other arinmodities used. Professor Nool Paton, who conducted a similar investigation in Edinburgh sotne years ago, says that the Glasgow studies reach the same laison as the Edinburgh ones-that what was wanted was a partial return to the national dish of porridge and milk in place of ten, brend, and jam, which has so universally replaced it in towns, and which was replacing it even in rural districts."
