STAFF.

Senior Inspector Old was in charge at Kennedy Town throughout the year.

Inspector Braley continued throughout the year.

Inspector Lacey arrived for duty on 1/1/29.

Inspector Knight arrived for duty on 20/6/29.

The above Inspectors have passed the examination of the Royal Sanitary Institute for Inspectors of Meat and Food.

Inspector Aslett was in charge at Ma Tau Kok throughout the year.

Inspector Fogwill was posted for duty at Kennedy Town from 1/1/29 to 23/6/29 and from 18/12/29 to the end of the year.

EUROPEAN OVERSEERS.

Overseer Johannsen was in charge at Central and Western Markets throughout the year.

GENERAL STATISTICS.

As compared with last year there is a slight drop in revenue. This is brought about mainly by the decrease in the number of pigs slaughtered. If used as a basis for calculations such as "variation in the per capita consumption of pork" this apparent decrease would be misleading. There has been a considerable increase in the proportion of large pigs used with a resultant increase in the average dressed carcass weight. Live stock prices have remained high in general with a tendency to rise. The use of Motor Meat vans for the carriage of beef from the abattoirs to the Markets has been highly successful and it has been decided to extend the service to the carriage of pork and mutton also. In the interest of efficiency and cleanliness it has also been decided to institute a service of 'Meat Porters' to carry the beef etc. from the vans to the Market stalls.
