3. For a period of three months subsequent to their selection they shall receive the ordinary prison rations, but with parboiled rice in place of Rangoon
rice.
4. On the expiration of that period, and provided no case of beri-beri has occurred among them, they shall be divided into four groups, hereinafter referred to as Parties A, B, C, and D, and shall be constantly under our supervision.
5. The members of Party A shall receive the following diet:-

12. The usual mode of determining dietetic requirements is to ascertain statistically what the customs and habits are as regards food of the people under consideration. Physiological investigations have shown the quantities of the various food constituents necessary for the maintenance of health. Based on this knowledge diet scales have been claborated.
13. The bulk of the work in this connection deals with European standards, and these, while in a general way applicable to the amounts of the essential con- stituents of food, are not strictly applicable to the relative proportion of the various articles of food required by Oriental peoples.
14. From the scientific standpoint diets are valued :—
(1) By the amount of proteids, fats, carbohydrates, and salts which they
contain;
(2) By the amount of carbon and nitrogen which they contain.
