Milk utensils will be thoroughly cleaned and sterilised before being taken to the cow-shed, and the greatest care must be taken to keep them so.

Before starting to milk the cows, the shed must be cleaned out, all manure removed to the fertilizing pit and the cow's udders washed, then change clothing for a clean white suit supplied by the Company. Hands must be washed before milking each cow and a clean cloth is provided for wiping the udders of cows and drying the hands.

Do not put the first drawing of milk into the milk pail as it is often dirty, let it go on the floor.

Do not allow drops of water from your fingers to fall into the milk- this is very objectionable; we want pure, clean milk only.

As each cow is milked, weigh the milk and pour it into a receiving can which always keep covered against flies and possible taints from the shed. When finished milking, take the milk at once to the Dairy. On returning to the cow-shed.change your milking suits, which are to be used for milking operations

only.

Milk is most susceptible to the assimilation of odours of any kind, therefore it is imperative to have everything in connection with the cow-sheds and cows as clean as possible and more especially while the cows are being milked.

Milk is a complete food for man and animal and is known to be the happy hunting ground for all sorts of disease germs, so you must realise the necessity of absolute cleanliness in the production of it. You are expected to keep water tanks, water buckets, feeding tubs and foodstuffs free from taints and dirt of all kinds. It is not expected of you to do anything impossible; take an interest in your work, be punctual at milking and feeding times, attend to the comfort of the cows under your charge at all times, and always bear in mind that fresh air is almost as essential as food to keep them and yourselves in good health.

Cattle attendants who do not wish to comply with the above instructions may submit their resignations to the management or take the risk of being summarily dismissed.
