There are two groups of fish-~- "ally types, like salmon, meskoral, herring, etc., which hold fat in the flakes, and white fish Including cod, hake, willing and haddock, for which the fat is stored in the liver. Naturally, the oily flesh is

Hot water, just beneath the boil, “acnia” the delicato albu- men and provents loss of juices. Lemon juice hasten the satting. (Any Juices reluc to ulio stock are available for sauce or soup making.)
Plates protect the food, SO water in pan may be boiling. Process takes a little longer than "poaching,” but there is no "iosa" "whatever
Fish flesh sots at a lower tem- perature then meat, so cooking Dace can be reduced after a se minutes.
To set juicer and keep centre milky and moist, fit must be woll heated or by Havour will escape into fat, and fah emerges "grensy.""
