Apple Chutney And Cheese
Te following to a fine hot chutney
that adds a zest to any cold meat rupper.
Take!
4 lbs green apples.
1⁄2 15 malet brown sugar.
1 lb stoned dates,
4 oz sult.
1 quart vinegar.
1 lb raisins (stoned.)
3 lb preserved ginger,
4 ozs garlic. (If not procurable use
ib onions.)
12 chillies.
Peel, core and chop apples. Cut up the ginger, dates, and raisina. Put garlic through the mincer, Boll together all the ingredients in the vinegar, till the consistency is that of jam.
If led hot, add more chillies. Pour into small pots, and cover when cold,

2 teaspoons salt.
Peel and cut up the apples. Stew til tender In the vinegar, with the spice tied in mustin. Add the sugar and boll 10 minutes. Lastly add raisins, salt, and ginger. Bring to the boll ogain, then pour into pots. Cover when cold,

Take 10 tart apples. Peel and core them. Cut Into silces. Place saucepan, add 2 tablespoons water, Juice of 1 lemon and 3 tablespoons caster sugar. Cook til opples are soft, then pass through a sieve, Cool, and pot like Jam. Serve cold with any roast game, or use as a filling for |a sandwich cake.
