Orange Soufica
Coranges.
I Wine glass of port- desired.
2 oz butter.
14 oz flour,
11⁄2 oz spjar.

Cut a slice off the tops of the Granges and scoop out the pulp with out breaking the skins. But pulp through a slave and add wine. Melt the buiter in a pan, add flour, stir in the orange pulp, and boil until thick. stirring constantly.
Remove from the fire, let mixture; cool, ne sugar then the egg yolks one at a time. Now stir in the sty whisked egg whites,
Fill orange enses three-quarters full with the mixture, pince on a baking sheet, and bake in a moderute Loven for 20 minutes.
Serve immediately.
Orange Pancakes
3 oz self-rising flour.
1 eng.
pint milk.
Pinch of salt and sugar.
1 teaspoon grated orange rind.
Mix flour, salt, sugar, and orange rind, make a well in the centre and Kradually bent in the egg and milk until a smooth balter is obtained,
Heat a te lard in a sayil trying or pancake pan, pour in u very little butter-allowing it to run all over the pan--cook on one side then turn. Holt up and keep hol until required.
