Chop up finely the leaves from six to eight sprigs of mint and put them into the tureen with eight lumps of sugar. Pour over them two lable- spoonfuls of boiling water, stir well, and leave for a few minutes. Then add about half a pint of vinegar. Satice for Storing

If you have a supply of mint and want to keep it fresh for a day or two, wash it in water to which a little bicarbonate of soda has been added before stonding it in water. Fruit salad can be improved by the addition of a sprig or two of fresh mint.
If you are going for a picnle, try mint blended with cream cheese Brit attle fresh cream, seasoned with salt and pepper. It makes delicious sandwiches,
