Such variety of salads one can make! Thero's lettuce and chicory, endive und watercress, and the pale heart of a young cabbage finely shred- ded.

There is nothing dim. cult about making a salad provided you fol low a few simple rules.
Rules for Success
First, and most impor lant, lettuce must be crisp. To revive a limp Istuce put it for a short Ime in cold water.com, taining a few drops of lemon juice.

A pretty salad prepared with 1 fet- tuce, small tomatoes, half a small eucumber, 3 spring onions, mayonnaise. Shred the washed and dried, lettuce into a salad bowl. Beald and kin the tomatoes, slice half of them and. arrange them in a ring on the lettuce with the sliced cucumber and chopped onions.....

Meat Roll
Now a recipe for making a savoury meat roll to serve with salad.
Ingredients: 21b. lean beef, lb. Seasoned sausage meat, teasp. of powdered sage. Balt, pepper, 2 cupfuls of breadcrumbs, 2 eggA.
Remove skin and grisile from the beef, then put the meat through a mincer. Add the sausage meat, pow- dered sage, salt, pepper and bread- crumbs and bind.with. 110. eggs.......

Glazed Yeal
Breast of veal, stuffed with a savoury filing and glazed in appetising.
Ingredients: A breast of real (aak the butcher to bane 1); for the
breadcrumbs, stuming: 6·0%
30% shredded auct, salt, pepper, a little grated lemon rind, 2 tablespa, chopped paraley, 1 tablesp. thyme, 2 eggs.
Mix all the ingrédients for stuffing together, and bind with the beaten eggs. Place stuming on the meat, roll up and lie with tape. Hub the roll over with dripping, or place the plece of veat fat over the top.
Bake in a fairly hot oven for 1 hours, basting, frequently. When cold. press into a cake tin, and pour over some glaze (see recipe for,mest roll) or a pic. Leave to set.
Ham & Tongue Galantine
A silce or two of this galantine and
a good helping of salad makes an ex- cellent spring meat.
Ingredients: 11b. minced ham, 116, diced tongue, 2 sliced hard-boiled eggs, 1 small onion. 1 teasp. chopped päts- ley, 1 tensp. thyme.
Mix together ham, tongue, grated onlon, parsley and thyme.
Heat pint stock, add joz. gelatine. then stir in a little more stack. Pour
a little into a mould and leave to set. then put in three slices of hard-bolled -egg, soma.of.the..ment mixture. and more liquid. Continue the inyera.
