IGHT-WEIGHT finger foods, or "pick-up" foods, for outdoor faring bring a technique that is all their own. Much of the art lies in having the fullest food value framed in the finest way.
We have to remember that drinks as a rule are scarce, so flavours should be tart or fruity, and not too sweet for second course.
