A FRIEND of mine, invited me to lunch the

other day. She had collected recipes on her travels abroad, wanted me to sample some of them. She gave me a delicious lunch; and later some of the recipes. Here they are. First wo were given

Eier in Rahm

(Eggs in sour cream) which makes an excellent light entree. This is how it is made. Allow a quart of milk to sour naturally. When thoroughly soured, drain for 24 hours In butier-muslin. Then beat the sour cream till quite smooth and put in a fireproof dish. Break six oggs carefully over 1. Sprinkle with chopped anchovies, chives, parsley, and bread- crumbs, and put in the oven till tie eggs are set.

This was followed by

Schnitzel

but it was not the usual Vienna Schnitzel. Suced onions are fried in hot fat and sprinkled with paprika. Thin slices of fillet of veal, previously sensoned and floured, are added. When the meat Is near cooked stir in a few tablespoonfuls of sour cream, prepared as in the previous recipe.

Served with this were some dainty quenelles-

with salt and pepper. Roll the paste out into long thin sausages with the hands, and divide into 1-inch lengths. Let stand for 1 hour. Poach in boiling safted water for about 10 minutes, drain and toss in hot melted butter. Sprinkle with breadcrumbs and more grated cheese

For salud, there was lettuce, dressed with oil and lemon juice instead of vinegar, and seasoned , with sugar as well as anlt and pepper.

We had the choise of two cold sweets. I had a slice of jam roll, quite different from our English version.

Biscuitroudade

It was called. yolks of eggs. Add gradually 4lb. of flour and. A lb. of sugar is worked with the finally, the whites of the eggs beaten to a stift froth. Put the mixture, which should be very light, on a shallow baking tin and bake in a moderate, oven for about 25 minutes till the pastry is nicely entoured. Remove from the oven, spread Sprinkle with sugar and let it get quite cool before with Jam, and roll up quickly, while still hot. cutting.

And, lastly, there was a novel claret cup which. we drank throughout the lunch--

Slice about 6 peeled and cored dessert apples thinly into a jug. Add 6 oz, of sugar, a cloves, n little cinnamon, and a.botile of claret. Put in the refrigerator till thoroughly cold, and strain before using.
