THERE seem to be two ways of look-
ing in summer. You can either dress and make-up like a riot of sun- shine, looking, when you are indoors and the direct light is not on you, like something between walking wallpaper and a mud facial, or you can look cool.
Round the office, right now, I see the wallpaper effect wins. Why? I mean why do you wear flowered and striped washing silk frocks when these are the hottest-look- ing effects you can get?
SAUCES THAT ARE DIFFERENT
ONE of the reasons why the French
chef generally turns out more appetising dishes than the cook of other nations, is that he realises the importance of sauces; he knows that an appelising sauce will transform an everyday dish into a meal which with delight an epleure.
Here are few hints on sauce- making, which a well-known French chef once offered me. He assured me at the same time that, if fol- lowed his advlee, my sauces would always be successful,

Veal And Ham Pie
This is a good recipe for veal, and ham pie:-Cut onc pound of veal into thin slices. Dice this with four ounces of two cooked ham; quarter hard-boiled eggs. and season to taste. Add stock from the veal bones. Make some pas- try and roll this out slightly larger than the dish, and cut bands about half an inch wide. When you have moistened the edge of the dish, lay on the bands.
Moisten and lay on the cover, trim this carefully. and decorate the crust with leaves cut out of the pastry.
Cut a hole in the centre to j allow the steam to escape. Brush the top with an egg. and bake in a quick oven, re- ducing the heat when the pas- try is firm,
