Tender as Chicken
OR a nourishing dish you can't do better than well-cooked tripe. It is delicious, too, and is enjoyed by robust members of the fumily as well as by those who need delicate feeding.
It is cheap, easily digested, and tender as chicken. There are many ways of serving tripe, one of the most popular ways ia to boll it with onions and serve it with white sauco.
Ingredients: 1lb. trips dressed, 4 medium-sized onions, pepper and salt, a nut of margarine, flour and a pint of milk and water.
Method: Wash the trips and boll In salted water for 11⁄2 hours, then spread with the forcement stuling and reboil for half an hour. Thicken with the flour and margarine, season well and serve with mashed potatoes.
With Tomatoes
Tripe and tomatoes combine to make
a very tasty supper dish.
Cover the bottom of a greased ple- dish with breadcrumbs, then put layera of tomatoes and cooked tripe cut into small pieces,

Ingredients: 1 pints of split pens 2oz. butter, 2 eggs, pepper and salt.
Wash the peas and put them to soak in the water for 48 hours. Remove any that float on the surface.
Tie in a Cloth
Tle them loosely in a clean cloth, leaving room for them to swell, and put them on to belt in cold water, ni- lowing 21 hours after the water has come to the ball.
When the peas are tender, rub them through a colander with the help of a wooden spoon.
Add the butter, beaten eggs, pepper and salt and mix all well together. The them tightly in a scalded and foured cloth and bell the pudding for au- other hour.
Turn on to a hot dish and serve very hot. This quantity of prase pudding is sufficient for six people.
