These are light and delicious. Allow one potato to each person.

Boil the potatoes in their skins, peet and mash them. Separate the yolk

from the white of an egg, bont the yolk and add to the mashed potato, tix. ing well and seasoning with pepper and salt.

Flour your bands, form the potato into balls, and dip in the beaten white of the egg and then into breadcrumbs. Fry in deep, hot fat and drain on paper. Serve very hot. Nourishing Soup
