looks. There are

rules you must not break If the fish is to be crisp and golden brown and chips to go with it are to be delicious, too.

Some young cooks Imagine that all they need do is put the frying pan on the gas or electric stove. throw in some fat, and when it is melted toss in the food.

That idea is wrong and leads to ruined digestions and spolied food. Follow my instructions and you can emerge from the frying test with flying colours.

Liver and Bacon

This favourite breakfast dish and is good for dinner served with fried onions.

Ingredients: 1. sheep's or lamb's Jiver, b. bacon, flour, salt and pepper. Method: Put the liver into a basin and cover with bolling water, and let it remain for 10 minutes, then drain, dry well and cut into inch slices.

Season 1 tablespoonful of flour with

1 teaspoonful of salt, and a sprinkling ot, pepper, and dip each slice of liver In the mixture. Heat the frying pan. fry thin slices of bacon, remove to a bot dish, keep hot until required.

Put the liver in the hat bacon fat. fry till well browned on both sides. Pince with the bacon, and keep hot,

Sprinkle in a level tablespoonful of flour, allow it to brown, then add plat water, atir until it balls, and strain
