Tasty Ways With Veal

THERE are many succu-

lent dishes in which veal plays an important part.

To make a delicious veal casserole, cut two pounds of veal in small pieces. Wash, prepare and dice one onion, one turnip, one carrot, and a little celery. Put all into a casserole and add one ounce of pearl bar- ley. Add a quart of water, finely chopped parsley, and seasoning to taste. Simmer gently for three hours and serve with tonst. Here is a thick veni soup:-Cover with water and boll separately a | knuckle of veal and three pounds of tripe. This will take about three hours. Then skim off the fat and put the liquors together in a pot. Cut the tripe into small pieces and do the same with the veal; with three large potatoes and two onions, Thleken the soup when boiling with a little flour. Season to

Veal mould is especially good:- Mince sumelent veni for your needs (the veal must of course be cooked first), weigh it, and add half the weight in fresh bread crumbs and two beaten eggs to every pound of meat,
