Buffet Supper

HERE are a few sugges
tions for small savouries for an informal supper party.
To make fish shapes you re- quire one pound of cooked fish, half a pint of thick white sauce, four tablespoonfuls of salad cream, two teaspoonfuls of an- chovy essence, half a pint of aspic jelly.
Flake the fish, mix it with the sauce, salad cream and anchovy essence and stir in the aspic jelly when cold, but not setting.
Senson to taste, fill small wet moulds with the mixture and leave in a cool place until quite firm. Turn out and garnish with water-
cress.
White fish. smoked fish, fresh or tinned salmon, lobster, crab, &c., can all be used for these shapes.
SAVOURY HORNS
Have ready some long strips of pu pastry, about one inch wide and an eighth of an Inch thick.
Grease some cone-shaped moulds and wind the pastry round them, starting at the point and letting each plece overlap slightly. If moulds are not available, short pieces of smooth round stick, shout one inch In diameter, can be used,
Brush the pastry with beaten egg and bake in a hot oven until brown (about twenty minutes.) When
done, allow them to stand a few min- utes before removing the moulds, When cold, all with a savoury fish of meat mixture, made as follows:-
I take half a pint of thick white sauce, stir in six to eight ounces of cooked meat or Bsh, finely divided, and season and flavour to taste.
Chopped parsley, piquant sauce. herbs. hard bulled egg, chopped onlon, capers, &c, are good flavour- ings for this.
STUFFED EGGS
Doll the required number of eggs til they are hard, and cul them in two. Remove the yolks and pound them with one of the following:- Anchovy essence, minced ham or tongue, savoury paste, pounded sar- dmes, cooked Ash, tinned salmon, lobster, crab, &c., cheese (flavoured with a little made mustard.)
Allow one small dessertspoonful of meat or fish to one egg. When the two ingredients are thoroughly mix- ed, reason to taste and moisten with melted butter or salad cream.
Cut a small plece off the ends of
the whites to make them stand, pile the mixture in them and garnish with
red pepper, chopped parsley, or
sileed olives.
