Potato Cutlet
Freshly cooked mashed potato:
Pepper and salt,
Yolk, of one egg
Apple chutney:
Slices of cold meat;
Fal for frying; parsley.
Add sufficient beaten yolk of CRE
to the mashed potato to make it lind,
then add a little seasoning,
Spread the slices of cold meat on both sides with a little apple chut- with them over ney, then cover potato mixture, smoothing it with a info. Try the cutlets in hot, deep fat, till a golden brown. Drain well, and garnish with parsley.
Savoury Toasts
G ozs of any cold meat;
3 ozs state bread;
Chopped parsley;
2 tablespoons brown sauce;
1 oz butter, pepper and salt; A little
milk;

11⁄2 teaspoon grated lemon rind;
ACHET toast.
Put neat through mincer, then plice in saucepan with the sauce-the- bread soaked in a little milk, lemon rind, parsley, and seasoning. Heat. then add beaten yolk of egg and mix well. Hlave ready some slices of toast already bultered.
Put some of the meat mixture on each slice, and smooth down with a palette knife. Whisk the white of cgg stimy, add a pinch cayenne pep- per, and plle roughly over the meat inixture. Sprinkle on little chopped parsley, and bake in a fairly slow aven to set meringue. Mutton Cups
