LTHOUGH Christmas is only a week ahead, It is by no means too late to start mak-

Ing preparations for the festive fare.

Several readers have written ask- ing for recipes for puddings, cakes and mincement, so that there isn't a last-minute rush.

Also, as we all know, Christmas menns extra expeuse. The wise home- maker will, therefore, plan to buy something every week out of the weekly housekeeping allowance, so that the burden doesn't come all at once to take the pleasure out of the party..

First, we must count up the pudding busins, and see that there are sufit- elent pudding cloths, with extra ones to tie over the puddings after they have bren bolled. For the wet padding cloth should be removed after cooking. and a clean one placed over the lops. When tied on, the cloth is turned back over the pudding, arid tied to form a useful handle, by which the pudding is Ulfted out of the saucepan.

Stenners are well worth buying. expecially for Christine cooking, as several puddings can be rooked at the same time.

Siere flour and salt into a large mixing bowl, add sugar and spices and Inix thoroughly.

Trepare the fruit, chop the raisins. finely red the mixed peel, first re moving the sugar. wash and dry the currants, pick over the sultanas, and thiuly peel and chop the lemon rind.

Add the cut-up cherries and chopped almonds and mix well. Stir in the milk, then the eggs (one at a time in case there is an unsound one), add the brandy and the strained lemon juice, and teaspoonful of browning to darken the mixture.

Bür in the baking-powder, then turn into a buttered" basin, and tie down with greaseproot paper and a scalded noured cloth. Boil for hours, or steam for 8 hours.

Filled Oranges.

Mince a pound of veal, mix with 20z, chopped cooked salt pork, good seasonings, a pinch of mixed herbs, and a beaten egg. Form into cakes and bake with Jat. When nearly cooked ar range tiny rolls of bacon on each cake, and serve with hot tomato sauce.

Allow a medium-sized orange for each person, cut of the tops, and scoop out the pulp. For oranges put four egg yolkes into double saucepan, add the orange juice, the juice of a lemon, and 30%, of sugar. Cook until slightly thick, then cram in 402, melted gelatine. When cool, fold in the the stiffly whipped egg whites and fill the orange skins with the mix- ture. Decorate with cherries and angelica. Scree each orange on a green leaf.
