I serve so many different ples that there are probably several of these recipes of mine which you have not tried yet.

Ingredienta: 11b, flour, Goz, lard, ipini water. itenspoonful salt.

Put the lard and water into a matico- pan and bring to the boll, then stir it into the flour and salt, and knead to a light dough. Place the dough on a ftoured board, allow it to stand fur ve minutes, then knead until a light dough is formed.

Bhape the greater portion of the dough with the hands into a hallow ple. The pastry must be kept warm or it will crack. When sumclently rained, till with seasoned meat.

Wot the edges with cold water and cover with a tu made from the remain- ing plece of crust. Brush over with beaten egg, decorate with leaves and diamonds, and brush the decorations with beaten egg-

Make a slit in the pastry, fix in n funnel of parchment paper. and decorate round the paper with pastry decorations. Place the pic in a bot aven for twenty minutes to half an hour. roduce the heat, cover with parchment paper soaked in cold water. and cook for one and n half hours.

Pour in a little good, fiat savoury slock with a little dissolved "pelatiné added. Leave to set in cold place.

In winter. Ingredi- ents: Goz. plain flour, 202. cornflour, Go fat (302 margarine and J0%. Turd), à teaspoonful sall, water, a squeezo of lemon juice.

Steve the flour, corn- flour and salt into a bowl and chop the fat into pieces thè size of a walnut. Mix to a fairly toft dough with cold water and lemon juice, then roll into a strip about three times as long as it is broad,

Fold in three, turn 10 that the folded edges are to the sido, and roll again. Fold in three. turn and roll. Alfoto the pastry to stand for an hour before using.

For the filling use: lb. sicak. 41b. kidney, 102, patent cornflour. Cut the meat into neat strips and the kidney into small pieces. Brush over with beaten egg, and bake for 15 to 20 minutes in a hot oven. Before serving sprinkle with Anely chopped parsley.
