A Versatile Vegetable
(ARROW is a vegetable of which

.Peel n marrow, quarter I, remove the seeds, and cut into sent pleces. Stew, in salted water till tender for 15-20 minutes. Melt 1 oz butter in a saucepan, add 1 es flour, and stir In gradually enougly milk to make a creamy sauce. Season and odd 3 oz

Peel marrow and cut lengthwise into halves. Remove seeds and wash morrow.
Make stuffing--Mix dry ingredients, add melted margarine and beaten egus.
Stuff with Cris mixture, place halves together again, and tie with string. Brurh the outside with a Bille eg, and coat with breadcrumbs. Place in boking tin with melted dripping, and hnke in moderate uven about 1 hour. Place on hot dish, and pour some Kravy round, or use white sauce it. preferred. Vegetable Marrow Purer.

I teacup milk.
1⁄2 tablespoon cornflour. Peper and salt.
Peel marrow and remove seeds. Cut into small blockts. Cut up onion adu and celery. Melt margarine, vigetables and toss in fit five min- utes.
Add quid, bring to the bell. Sim mer 1 hours. Sieve. Replace soup In pan, and when bolling add the corn flour, broken down to a smooth paste with the milk. Sur till it boils and thickens. Season and serve. Vegetable Marrow Jam
To every 1 lb marrow allow I b sugar. To every 5 lbs ΙΠΠΕΙΟΥ allow:-

2 ozs bruised stem ginger.
44 teaspoon cayenne pepper.
