A Versatile Vegetable

JARROW is a vegetable of which

we make too little and tou infre- quent use. Yet it is one of the most Versatile vegetables. Here are some delicious ways of serving it:-- Marrow au Gratin

Peel a marrow, quarter it, remove the seeds, and cut into neat pieces. Stew in salted water till tender for 15-20 minutes. Melt 1 oz butter in a snutepan, add i uz flour, and stir in gradually enough milk to make a creamy sauce. Senson and add 3 oz grated cheese.

Butter a fireproof dish and arrange in it the marrow and sauce in alter- bate layers. Sprinkle sume grated cheese on the top, and place in moder- site oven to brawn. Baked Stuffed Marrow

1 small marrow;

4 tablespoons breadcrumbs;

3 oz cooked "ham;

1 oz margarine; 1 onion;

1 egg 1 tablespoon chopped pars- ley;

Dripping for basting;

Gravy: pepper and salt.

Feel marrow and cut lengthwise into halves. itemove seeds and wash

marrow.

Make stung-Mix dry ingrédients, add melted margarine and beaten CRKS,

Stuff with this mixture, place halves together again, and lie with string.

Brush the outside with a little ega. and cont with breadcrumbs. Place in baking tin with melted dripping, and bake in moderate oven about 1 hour. Place on hot dish, and pour some gravy round, or use white sauce if preferred. Vegetable Marrow-Puree-

Turn all into preserving pan, bring to the boll, and simmer 2 hours til clear.

A particular point to remember in making this luscious jam is that on no account must it boil rapidly, or after a few weeks it will granulate, It is the long, slow cooking that makes the jum so delightfully clear and syrup- like.

A spoonful of it taken with milk pudding is delicious.
