to make them independent. Probably the efforts will have messy results at first.
Food should not be too sloppy for this reason, and the child can be pro- tecled by wearing a large rubber bib, while a mackintosh cover under his plate will protect the cloth.
A teaspoon is not the best feeding implement for the child's own use; he needs a special spoon that in light to handle, with n shallow bowl. I shall be pleased to give you further particu- lars of spoons and Grat forks.

Serve mixed orange and grapefruit pulp in grapefruit shells, sweeten to taste and sprinkle with powdered mint.
Parboil skinned lambs' kidneys, wrap cach in thin plece of bacon, fasten with cherry stick and bake in moderate over (Regulo Mark 5) Jor 10 to 15 minutes. Forcemeat balls can be rolled in flour and baked or fried. Scraps of puff pastry and the end of packet of pre- pared Welsh rarebit can be used for savoury.. Thunder în the Air
D
URING warm and thundery weather, milk will keep fresh longer if it is scalded, but 1. in spite of this precaution, you find it has turned, save it and make these excellent scones.
Mix together Goz, flour. 1oz sugar, 2 tablespoonfuls sultanas, one table- spoonful currants, half a teaspoonful of cream of tartar, pinch of salt.
Rub in 2oz butter and add the yolk of an egg and suficient sour milk to form a month, atiff paste.
Fold in the white of the egg, then fill some smalt greased patty tins with the mixture. Brush over with sugar and milk, and bake in a qulek oven.
Split open and spread with butter. Cream Cheese
Another way to use up sour milk is to turn it into cheese.
Stand in a warm place to thicken. then slir in a teaspoonful of sall to cach pint of milk.
Tie the cream in a muslin bag and bang it up in the shade to drain. This will take about two days.
When quite drained, tighten the bug, and press it between two plates to squeeze out all the remaining mols- ture. The cheese ta then ready for 1150. Serve with buttered rolls and cucumber.
Curdle Cake
One of the nicest things to make with sour milk is curdle cake. Here is the recipe.
Mix together fib. self-raising four Make a well in the and 4oz sugar. centre and pour in half-pint sour milk and a few drops of vanilla.
Mix well, then stir in four table- spoonfuls of sultanas.
