Line a fan fin with it, trim and decorate the edge, prick the bottom pastry, cover with greaseproof paper, and put in a few crusts. Bake in a moderate oven on a solid shelf (Regulo Mark 5) for 20 minutes, take out the paper and crusts, and bake for 10 minutes morc.
When cold fill the flan with red or black currants. that have been stewed in syrup until tender and drained. Cover with 4 pint of the juice, stiffened with or gelatine. Whip some cream, fold in the stifly whipped egg white and a little sugar, and pile on top of the flan when the jelly has set.
